Easy 'Raw' Kale Chips
Kale is one of the healthiest vegetables on the planet! It is especially rich in calcium, vitamins A, C, and K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus. It contains antioxidants as well as eye-health promoting compounds. WOW - we need to eat more kale! But other than in salads and smoothies, how can you enjoy this leafy green!? I LOVE kale chips, so here is a recipe that is not only easy, but really versatile as well. Enjoy! (If you aren't worried about keeping these raw, or are just short on time - see my notes below to cut the cook time down to 20 minutes).

  1. Wash & de-stem your kale, pat dry with paper towels or a clean tea towel.
  2. Pour olive oil into a small bowl.
  3. Rip the kale into chip-sized pieces (not too small).
  4. Dip your fingers into the oil and massage the leaf until covered (not dripping, just covered).
  5. Place kale pieces on a dehydrator sheet.
  6. Add salt and pepper lightly over-top kale.
  7. Once you fill your dehydrator (I usually get 4 full sheets out of this batch with some kale left over for a salad) set the dial to 105F and dehydrate for 8-10 hours (depending on how crispy you like your chip).
Recipe Notes

For variations on this recipe you can use naturally infused olive oils - I recently used a blood orange infused oil, it was delicious! We like to get creative with other seasonings. Some great choices are nutritional yeast, chili powder, onion powder, and garlic powder. Like Dill Pickle chips? Try preparing your kale leaf with vinegar and olive oil, then sprinkle with a mix of nutritional yeast, dill, salt, and pepper. Like BBQ chips? Try preparing your kale with olive oil mixed with a bit of tomato puree and then season with smoked paprika, onion powder, salt, pepper, and coconut sugar. Get creative!

Don't have a dehydrator? Short on time? Using your conventional oven will cut down considerably on the cook time for this dish. Set to 300F, place kale chips on a baking sheet lined with parchment, and bake for 20 minutes or until edges are slightly browned. The chips won't be raw - but they will still be absolutely delicious!
