Instant Berry Pudding
This is an excellent pudding for breakfast or a quick snack. It contains lots of healthy fats (including all 3 omega’s), protein, antioxidants, vitamins, minerals, and dietary fibre! Garnish with fruit, cacao nibs, or a touch of granola. Yummy!
- 2C young coconut meat
- 2C organic frozen berry blend
- 1 1/2C water
- 1/2C maple syrup
- 1/2C chia seeds
- 4T acai berry powder
- 2T lucuma powder
- 1t vanilla bean powder
Put all ingredients into a high speed blender and blend until smooth, then dish up a serving with the garnish of your choice. Pour remainder into an airtight container for storing in the fridge, or portion into snack-sized tupperware to send in your kids lunch for school. This can also freeze and be used as a berry ice cream!
