Easy Chia Pudding
I am SO excited to share this deliciously fun recipe! This pudding is a great breakfast or mid-morning snack, and is sure to sustain you as it’s full of calcium, protein, antioxidants, vitamins, and all 3 of the omega’s! If you’re not in the mood for berry, this pudding can easily be switched to chocolate or creamy custard by substituting either cacao or lucuma for the acai powder.
2C almond milk
1/2C chia seeds
4T acai berry powder (or cacao or lucuma)
4T coconut nectar (or agave if you have sweeter tastes)
1t vanilla bean powder
Blend almond milk, acai berry powder, coconut nectar, and vanilla bean powder until well blended, pour into glass jar (with lid). Add the chia seeds, tighten lid and shake. (Let a child do this if you can, they LOVE it!) Chill in fridge overnight to set. Shake and serve with berry garnish. Mmm!
